Makes enough for 10 people

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Put all the ingredients in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Next, take off the heat allowing it to cool completely. Pour into a sterilised bottle, close it keeping it in the refrigerator, it can be stored for around a month.

To make Batch Mix: Mix all the liquid ingredients into one large bottle, leave to sit for an hour, then filter it preferably using muslin, to ensure it's completely strained.

When ready to serve: Pour 85ml of your premix into your cocktail shaker containing ice, and agitate carefully for a minute to cool it down. Filter into a frosted cocktail glass or similar, garnish with a few cranberries and complete it by giving it a quick spritz with the mandarin essence over the top.
